Top your burgers with this pastrami for the perfect BBQ upgrade.
When it comes to making a BBQ and grilling menu, honestly, less is more. You don’t need many recipes for your steaks, burgers, and hot dogs.
Where we do like to have fun is with the additions we add to the BBQ – the appetizers, drinks, and sides.
Our favorite BBQ additions include our grilled pita (so good!), and hummus with Israeli salad to go with it! Basic grilled onions, a sugar-free lemonade that screams summer, and a roasted eggplant appetizer round it out perfectly.
Last summer I noticed my sister-in-law Devoiry had a pan of pastrami and onions on the grill. And it was the most popular part of the BBQ. Everyone topped their burgers and hot dogs with it and they couldn’t get enough.
This summer I watched her make it. And like she said, it’s not really a recipe. But we’ve learnt that all those “not recipes” (like the secret to The Best Frozen French Fries – another great addition to your bbq!) are perhaps the best recipes of all!

We cut the onions into nice big chunks. We want them to have some crunch and bite, even after they’ve cooked.

The pastrami also gets sliced into cubes. To achieve those cubes, slice your pastrami once across the whole length, then across the width.

Sauté the onion in a generous amount of oil until golden at the edges.

If there’s extra oil once the onions are ready, drain it.

Then add the pastrami and BBQ sauce.

And sauté for a couple of minutes.

Transfer the whole mixture to an aluminum loaf pan…

… and keep this warm on the grill while you grill the rest of your food.

Pastrami Topping for Burgers
Ingredients
- 1 large onion, cut into large chunks
- oil
- 1 6 oz package of deli pastrami, cut into cubes
- 2 tbsp BBQ sauce
Instructions
- Heat a generous amount of oil in a sauté pan over high heat. Add onion and sauté until golden at the edges, stirring occasionally.
- Drain excess oil. Add pastrami and BBQ sauce and toss to combine. Make sure to separate the pieces of pastrami so they cook individually. Sauté for 2-3 minutes. Transfer to an aluminum loaf pan.
- Place the pan on the grill and let it sit for 10-20 minutes while you grill the rest of your food. Top your favorite burgers with pastrami topping.
