These slices of wraps are pretty to serve, they’re light, have lots of flavor, and a great all-around pick-up item.
It was at the cookbook launch party for Best of Kosher when were reminded about this presentation idea for wraps… and we loved it.
Because when there’s lots of food on a buffet, you don’t want a whole wrap, you don’t want half a wrap… but you would like to taste a slice. Plus… wraps are sooo pretty served this way. At the party, the wraps were the regular tuna and veggie. But, we’re taking the concept to make a gorgeous deli wrap platter for the Purim Seudah.
So pretty. And simple to make too.
Smear the wrap with the pesto mayo.
All over.
Top with sauteed onions and pepper.
Top with a couple slices of deli. You can combine deli types or use your favorites. Unlike regular wraps, where the ingredients are concentrated in the center, we are rolling these up a different way so we want a flat layer all over.
Roll up tightly. You do not need to fold in the sides; we’re going to slice the edges off.
Slice thinly and display cut side up.
Serve them in a platter next to your mini pitas! (Yes, add those greens in between!)
The same trays we used to serve the mini pitas works well here too.
My Healthier Version of a Deli Roll
Ingredients
- 2 whole wheat wraps
- ¼ lb turkey
- ¼ lb pastrami or corned beef
- 1 onion, thinly sliced and sautéed
- 1 red pepper, thinly sliced and sautéed
Pesto Mayo:
- ½ cup light mayonnaise
- 6 basil cubes
- 2 tbsp fresh chopped parsley leaves
- Juice of ½ lemon
- 2 crushed garlic cloves
- ½ tsp salt
Instructions
- Combine all pesto mayo ingredients.
- Place the wrap on a piece of parchment paper. Spread pesto mayo thinly on the wrap.
- Place a horizontal row of onion and red pepper strips anywhere on the wrap. Top with turkey and pastrami/corned beef slices. It’s important to keep the components very flat.
- Roll the wrap up very tightly, jelly-roll style. Wrap tightly in parchment paper and optionally in aluminum too. The parchment paper will tighten it up so the roll stays closed. When ready to serve, up wrap wrap and slice into 1-inch slices. You can also simply prep and slice right before serving. Serve, cut side up.
