Everyone loves a good 9×13 dessert, and (almost) everyone loves s’mores. We decided to combine the two into one super easy, crowd-pleasing treat!
S’mores are delicious, but they’re typically a mess. There’s lots of gooeyness and stickiness all around when kids are heating up marshmallows, then trying to quickly sandwich them between graham crackers while they’re still warm. Add some chocolate pieces/chip or chocolate spread in the mix and it’s not so pretty.
Making it all in one pan…with practically no mess…makes a lot of sense.
First, we make the crust. Mix together the sugars and oil.
Then add the eggs and vanilla.
Mix that until smooth,
then add the dry ingredients.
This is easiest to do with a gloved hand. Now’s the time you’ll also add the chocolate chips. That’s going to be the chocolate component in our S’mores (they’ll be perfectly melted, unlike those pieces of chocolate bar that never quite melt the right away in true S’mores). Take about ⅓ of the cookie dough out of the pan. You’ll save that part for the crumb topping. Smooth out the rest.
Once the cookie dough is smooth, spray a spatula with nonstick cooking spray
so that you can spread on the Fluff layer.
Crumble the graham crackers on top of the Fluff.
Make sure to get a nice even layer so there’s both marshmallow and graham cracker in every bite.
And finally, top with the reserved cookie dough. This time, you want the dough to be crumbled on top, not smooth.
Then bake!
Do you want to slice it neat and evenly like this? Chill the entire pan before slicing (you can always warm it up again after slicing if you want to serve it warm).

9×13 S’Mores Bars
Ingredients
- 1 cup brown sugar
- 1 cup sugar
- 1 cup oil
- 2 eggs
- 1 tsp vanilla extract
- 2½ cups flour
- 1 tsp baking soda
- ½ tsp kosher salt
- 1 cup chocolate chips
- 2 cups marshmallow fluff
- 6 (double) graham crackers
Instructions
- Preheat oven to 350°F. Grease a 9×13 pan.
- In the pan, combine sugars and oil. Add eggs and vanilla, and mix. Add flour, baking soda, and salt and mix to combine. Add the chocolate chips and combine.
- Press ⅔ of the cookie dough into the pan (about 2.5 cups of dough).
- Grease a spatula and use it to spread the marshmallow fluff across the cookie dough. (Try to place a few dollops over the pan so it’s easier to spread than if it’s all in the center.)
- Crumble graham crackers and sprinkle on top of fluff.
- Crumble cookie dough and place on top of graham cracker crumbs.
- Bake for 40-45 minutes. (We tested this in disposable pans. Baking time will be less in a glass or metal pan.) Chill completely before slicing.

Yes!! I’ve been doing this forever. I don’t even make separate layers, i just mix everything together. The graham crackers, marshmallows, dough and chips. yum!

I tried this recipe after trying another recipe with fluff that failed and I had the same problem. The layer under the fluff just stayed raw even after cooking for an hour and the fluff just kept rising. Any idea what went wrong? Thanks!

I had the same issue – the bottom layer is raw and the fluff bubbled though the cookies on top

I had the same issue. the fluff didn’t rise but the bottom layer was raw and the top was getting too crispy. I couldn’t leave it in any longer. (45 minutes in a 9×13 tin)

Tip for spreading marshmallow fluff I put it in the microwave for a minute and then spread it with a wet spoon. It works like magic spreads quick and neatly

I made this and the bottom was raw as well but top was crispy! what went wrong? any tips?
