Sheet Pan Chicken Sandwiches

These are the easiest chicken sandwiches you will ever make. It’s a complete meal on one sheet pan.

In the summer, so many of us tend to cook less, cook faster, and with less pachke. 

Is that even possible when you are a BCP and Dinner Done fan? We’ve been making recipes easy and quicker since 2016! We aim for most of those dinners to be super child-friendly, but there’s also plenty of quick and easy meals that appeal to both children and adults, like this one.

In the chicken category, there’s Sticky Honey Garlic Pargiot, 9×13 Classic Chicken with Rice, 9×13 Honey Garlic Confit Chicken (super popular!), this Baked Schnitzel, and 9×13 General Tso Chicken.

And now for these chicken sandwiches. Simply throw it all together on a sheet pan with spices, and you have all you need for delicious chicken sandwiches in 1-2-3!

Don’t want veggies inside? Leave out the ones you don’t want and double the onions.

Sheet Pan Chicken Sandwiches

Ingredients

  • 1 lb skinless, boneless chicken breasts or thighs, cut into nugget size
  • 1 medium zucchini or red bell pepper, diced
  • 1 medium onion, diced
  • 4 oz mushrooms, diced (optional)
  • 3 tbsp oil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  • dash black pepper 

For Serving:

  • pareve caesar or garlic mayo dressing
  • sesame baguettes

Instructions

  • Preheat the oven to 425°F. Grease or line a baking sheet.
  • On the prepared baking sheet, toss together all ingredients. Bake for 25-30 minutes, until chicken is cooked through and vegetables are crispy at the edges.
  • Place chicken in baguettes. Drizzle generously with dressing. Serve.

    The chicken doesn’t get dried out from baking so long?

      It usually comes down to personal preference. Boneless thighs tend to be juicier
