What are fat drippings? If you’re pan-frying your burgers or any meat, you’re left with very flavorful fat in the pan. You can use that to start off this sauce! If you’re using fat drippings, you will have enough flavor and do not need the extra spices.
Gravy Fries
Ingredients
- Homemade or frozen French fries
- ¼ cup oil or fat drippings
- 3 tbsp potato starch
- 3 cups chicken stock (or water mixed with consomme)
Seasoning if you are using oil instead of fat dripping:
- ½ tsp salt
- ¼ tsp paprika
- ⅛ tsp black pepper
- ⅛ tsp garlic powder
- ⅛ tsp onion powder
Instructions
- Prepare French fries as desired.
- Prepare the gravy. Heat oil with seasonings or fat drippings.
- Quickly stir in potato starch until it’s incorporated well and cook until it has some color. Add in chicken stock. Cook, stirring occasionally, until it thickens.
- Taste and adjust seasoning with salt and pepper. You want it to taste on the salty side.
