Great rice; no sticky pot to deal with at the end.
Sure, sushi is a fun meal that tends to please everyone (make some rice, choose your fillings). It’s useful in lots of recipes besides for sushi too. Some favorites include this Sushi Salad, or the kid-friendly favorite Avocado Crunch Sushi Roll from Dinner Done. Adults (and Renee’s kids) appreciate this gorgeous Salmon Crudo that’s also served on top of sushi rice.
You can also use sushi rice in poke bowls or, another fave, the Almost Poke Bowl in Dinner Done (called “Almost” because the fish is cooked in that version).
If you don’t want to roll sushi, but think your family would still love a sushi-style dinner, and you don’t want to roll anything, you can make Sushi Donuts.
And, of course, once you are making any of these recipes, you might also need some spicy mayo and sweet sauce (you can totally buy these too–or save the containers that come with your sushi take-out).
Sure, there’s lots of uses for sushi rice. If there’s one annoying thing about it–it’s that sticky pot that you’re left with at the end.

Not anymore.
Now you can make amazing sushi rice in the oven. Reader Miriam (@busywithfam) first suggested the idea and tried it out with success! And so, we were game to try the idea too and now we’re not turning back.
You can bake all kinds of grains in the oven too! See Prepare your grains in the oven post.
If you do want to actually roll sushi, here’s an easy hack: keep your sushi mat in a Ziploc bag so you don’t need to clean that afterwards either.

Rinse rice.
You can use the same measurements with white or brown rice; brown rice just might take a bit longer if the quantities are the same.

Add water, oil, and salt. Cover and bake for 1 hour and 15 minutes.

Uncover rice. Place a paper towel over the baked rice to absorb extra moisture and let stand for 10 minutes.

Add rice vinegar and sugar.

Season with additional salt to taste if desired.

I use boiling water. and only needs to bake for around 40 minutes
Great idea! I can’t wait to try it! If you boil the water before adding it to the rice, it should bake in about 30-35 minutes.
I take boiling water straight from my urn- takes a few seconds, no boiling required because it’s always filled
What should we bake this on? 350? 375?
My recipe is 2 cups sushi rice to 2 3/4 cups water for 45 minutes with little oil and it comes out perfect
Made this recipe tonight and it was perfect – much better than my old one!! Thanks so much!
Hi I made this recipe following one of the comments about hot water…I used 3 cups hot water and baked it for 40 minutes it came out amazing.

You don’t specify what kind of rice. Does it need to be sushi rice or any rice would work?
I had the same question!
I made this one time but didn’t let it cook long enough and it didn’t work out. This time, I followed the instructions EXACTLY and it came out great! I used sushi rice, My only regret was that I didn’t make two pans worth as one pan was not enough for all the sushi rolls my family wanted. Thank you BCP!
I forgot to add – I did need to add additional seasoning – salt, sugar, and rice vinegar.
